Natalia Rudin on Instagram: "Ok so this is how I spatchcock a chicken which basically just means making it flat. Traditionally you would completely remove the spine but I am lazy and just cut down one side and leave it on. I always make stock out of the bones after and this is just easier to keep it all in one place. You need some good kitchen scissors and a bit of strength but it is honestly easy and the only way I will roast a chicken these days. I find it much easier to carve apart afterwards
